Recipe: Pasta Marinara Veggie Style

Last night I was starving and decided to whip some ingredients together that I needed to get rid of before they went bad. I had some parley, asparagus and garlic. That is how veggie pasta marinara was born!

 Ingredients:

Pappardelle noodles (wide past noodles) 1 clump about 200 calories

1 jar of your favorite chunky marinara sauce

2 cloves of garlic

½ cup of fresh parley (make sure its fresh)

¾ cup of chopped asparagus

4 oz of texturized soy protien or Gimmie Lean veggie sausage

2 table spoon of olive oil

 

Directions:

In a pot boil your papardelle noodles till tender and set to the side.

In a sauce pan heat up your olive oil. Add your chopped garlic (try smashing the chopped pieces of garlic with a fork it releases the aroma). Add your veggie sausage to the pan and let cook for a few minutes. Then add your asparagus and parsley, saute for 6 to 8 minutes until all ingredients are tender and the sausage is brown. Finally add in your chunky marinara sauces.

Pour sauce over noodles then eat.
