Food: Roasted Beets

I am becoming Dwight Shrute (sorry if you don’t watch The Office). I am two seconds away from putting away my laptop and becoming a full time beet farmer. They are so delicious! This recipe is very simple I just roasted some chopped beets and I served it with kale, fresh corn and sautéed monk fish.
Ingredients:
1 Beet
1 tbsp. Olive Oil
Salt
Pepper
1 Garlic clove
Onion powder
Skin and slice up the beet. Pour olive oil over sliced beets. Sprinkle a dash of salt, pepper, onion powder to your liking. Chop up the garlic clove and mix in with the seasoned beets. Allow to bake uncovered for 45 minutes at 375. Enjoy!
